Estimation of Resistant Starch Content of High-amylose Corn Starch

Abstract

|
Resistant starch (RS) of autoclaved and cooled amylomaize ¥¶ starch was simply estimated from direct correlation between RS and ¥á-amylase resistant starch (A-RS) of either mixture of Novelose 330 and Corn starch (Mixture ¥°) or Novelose 330 and amylomaize ¥¶ starch (mixture ¥±). Correction factor of 1.17 and 1.14 were required of r mixture ¥° and mixture ¥±, respectively, to convert the estimated RS value into AOAC RS content. Swelling power and Rapid Visco Analyser (RVA) peak viscosity of the heat-treated starch and the mixture linearly decreased as RS content increased. RS content of heat-treated starch estimated by the relationship between RS and A-RS of the mixtures was more accurate than that obtained by the relationship between RS and swelling power or RVA peak viscosity of the mixtures.
